These cookies are one of the household favorites. They're light and crunchy, with just a hint of lemony goodness. I usually double the recipe and make LOTS.
Ingredients:
1/2 Cup unsalted butter
1 1/2 Cups 10X sugar
1 egg yolk
3 Tablespoons lemon juice (fresh-squeezed is best!)
2 Cups All Purpose Flour
Cooking spray or Parchment paper (I use butter flavored cooking spray.)
Directions:
Cream butter and sugar thoroughly.
Beat in egg yolk.
Add lemon juice and mix thoroughly.
Add flour gradually.
Chill dough for at least 30 minutes.
Preheat oven to 350 degrees.
On a lightly floured surface, roll out a portion of the dough to approx. 1/8" thickness.
Cut into desired shapes. (I use a 2" round.)
Bake 10-12 minutes, or until edges are golden.
Remove from cookie sheet and sift 10X sugar over the warm cookies.
